Reading Challenge

It is May 11th already…where has the time gone? One of my goals for the year is to read 30 books. I had a pretty slow start because life got away from me. I have had a hard time with the work/life balance and I’m finally starting to get back in the swing of things. Lately my nights have been consumed by different shows on Netflix and I keep trying to stop and read a few chapters here and there but you know how difficult it is to stop a Netflix series in the middle of a season!  I have […]

30 Things to Do at 30

I kind of missed the boat with completing a 30 Things to Do BEFORE 30, before I turned 30 (today) so I decided to do a 30 AT 30. I think this is better anyway in terms of continuing on my path of self-love, growing in my career, and creating even more goals for myself past the age of 30. I don’t think there should be a certain age you SHOULD do things by as long as you are constantly working towards achieving what you want to achieve. If it takes me until I’m 80 years old to finally visit Graceland […]

Paleo Turkey Chili

It’s been frigid out lately so I’ve been on a soup and chili kick.  Before becoming Paleo, I had my go-to chili that was simply delicious and easy to make. It was Jane’s Vegetarian Chili featured in Cooking Light magazine (see recipe here). I would alter the recipe to add more spice and some ground turkey calling it Jane’s not so Vegetarian Chili. The recipe called for 4 different types of beans which I’m sad to say are a no-no for paleo followers. If you are interested in the Paleo Diet, I definitely recommend the book, Paleo for Beginners: Essentials to […]

Vacation in Oahu, Hawaii

Waikiki Beach Sunset

I finally took a vacation! My first in over a year and a half.  It was perfect. Perfect destination, perfect weather, and perfect accommodations. My husband and I decided to travel to Hawaii for our five year anniversary, 10 year celebration of our first date and four our upcoming 30th birthdays. I honestly can’t think of one disappointing thing about our trip. Well maybe the only thing would be the cost of food on the resort. Which is why we decided to eat a lot of our meals at local places. I am always down for supporting a local business. We found some […]

Paleo Cupcakes with Almond Butter Frosting

For the most part I am a very healthy eater. I love vegetables especially sweet potatoes and choose organic, all natural or free range options at the grocery store. I believe eating healthy foods can change both your physical health and mental health. With that said, I am also a huge fan of desserts! I love chocolate. I don’t think there is anything wrong with having desserts every now and then. I even think its important to keep yourself on track. In my experience if you don’t allow yourself treats every once in awhile, you are more likely to over indulge. […]

Paleo Chocolate Chip Muffins

One of the best things about forgetting you bought bananas is that even when they are past their prime, you can still use them for delicious recipes. I decided to try a new Paleo muffin recipe. I also had some leftover Paleo, gluten free chocolate chips so chocolate chip muffins were calling my name. It took about 15 mins for prep and 25 mins cook time for about 40 minutes total time. Mac & Cheese Bites Recipe

These don’t fall into my typical diet since they contain both pasta and dairy but boy were they good. I don’t even know what the Paleo equivalent would be for a snack like this! I’ll have to create one for a follow up post! When I am cooking for other people, I try to adhere to their diet and not just my own. Following the Paleo diet is a personal choice and not one because I have allergies or an illness. If you like cheese, dairy and pasta, this is definitely a recipe for you! It’s pretty easy and has […]

Melt in your mouth Vegan Brownies!

I have to start by saying, I’m not vegan. I am Paleo (most of the time) but I really enjoy baking and when my friend’s birthday bash was coming up I knew some of her family would be there and they are vegan. I wanted to make something yummy that everyone could have so I found a recipe for double chocolate chip vegan brownies. I didn’t have all the ingredients so I made a quick trip to Whole Foods to pick up the following: Ingredients: 1/4 cup – Almond butter, natural unsalted 1/3 cup – Maple Syrup, pure 1 tsp […]
